Ingredients:
- Noodles: 200g (7 oz) of your choice (lo mein, egg noodles, or rice noodles would work well)
- Chicken: 300g (10 oz) boneless, skinless chicken breast or thigh, cut into small bite-sized pieces
- Fresh Spinach: 2 cups, packed
- Asparagus: 1 bunch (about 200g), trimmed and cut into 2-inch pieces
- Mushrooms: 1 cup, sliced (shiitake, button, or cremini)
- Garlic: 3 cloves, minced
- Ginger: 1 tablespoon, minced (optional)
- Soy Sauce: 3 tablespoons (for a slightly brown color and savory flavor)
- Oyster Sauce: 2 tablespoons (optional, for extra umami)
- Sesame Oil: 1 tablespoon
- Vegetable Oil: 2 tablespoons (for stir-frying)
- Salt and Pepper: To taste
- Optional: Red chili flakes for heat or a squeeze of lime juice for a tangy finish
Instructions:
1. Cook the Noodles:
- Cook the noodles according to the package instructions. Once cooked, drain and set aside.
2. Prepare the Sauce:
- In a small bowl, mix soy sauce, oyster sauce, and sesame oil. Adjust quantities to taste. Set aside.
3. Stir-Fry the Chicken:
- Heat a wok or large skillet over medium-high heat and add 1 tablespoon of vegetable oil.
- Add the chicken pieces and stir-fry until they are browned and cooked through (about 5-7 minutes). Remove the chicken from the wok and set aside.
4. Stir-Fry the Vegetables:
- In the same wok, add the remaining vegetable oil. Add the minced garlic (and ginger if using) and sauté until fragrant (about 30 seconds).
- Add the asparagus and mushrooms to the wok and stir-fry for about 3-4 minutes until they start to soften.
- Add the spinach and cook until it wilts (about 1-2 minutes).
5. Combine Everything:
- Return the cooked chicken to the wok.
- Add the cooked noodles and pour the prepared sauce over the top.
- Toss everything together until the noodles are well coated, and the ingredients are evenly distributed. Stir-fry for another 2-3 minutes to allow the flavors to meld.
6. Serve:
- Taste and adjust seasoning with salt, pepper, or more soy sauce if needed.
- Serve hot, garnished with red chili flakes or a squeeze of lime juice if desired.
